Why the Wine Industry Loves Coravin Pivot

Pivot - Man Pouring Wine at the bar

Say “hello” to the newest wine preservation system in the Coravin lineup – Coravin Pivot. Unlike the Coravin Timeless systems (e.g. the Model One, Two, Three and so on), the Pivot requires that you pull the cork. After removing the cork, simply insert the stopper and the device before pouring. This method preserves your everyday, table wines for up to four weeks allowing you to match wines to your mood and meals. Yes, that means that you can have a glass of the same Pinot Noir every Saturday with Chinese takeout.

Benefits of Coravin Pivot

Pivot helps you rotate through some of your favorite dinner bottles during the week and ensures that those weekend wines last from one Friday to the next. Here are some other benefits we love:

  • Wine in moderation: Coravin Pivot allows you to enjoy wine in moderation and, on the flip side, savor one glass per night for 4 or 5 nights in a row – no matter what, the last glass will taste as good as the first.

  • Switch it up: Pivot is the perfect way to rotate between a few of your favorite everyday wines at once – so, enjoy a glass of white on Monday and red on Tuesday.

  • Buy any type of bottle: Coravin Pivot fits on any type of still wine bottle regardless of closure types – you’ll always pull the closure out to replace it with the Pivot stopper.

  • Explore: Pivot helps elevate your wine drinking experience – enticing you to try new wines and food pairings.

  • Reduce waste: Coravin Pivot helps you reduce waste by ensuring no wine gets poured down the drain. With a preservation time of up to 4 weeks – there’s plenty of time to enjoy the bottle yourself or share with a friend.

What the wine industry is saying about Coravin Pivot

Restaurateurs, sommeliers, and winery managers are all singing Pivot’s praises – namely, its durability, efficient pour, and sleek design.

Bryan Detert, Regional Manager at Tommy Bahama, shared, “Coravin Pivot’s speed and efficiency is a welcomed upgrade that the Tommy Bahama bar staff appreciates. Pivot allows our staff to recommend better wines and have the confidence of a fast, fresh and dependable pour.”

Another common benefit is how easy it is to operate. Using Coravin Pivot is simple: Remove the cork, insert the stopper, insert the system, then tip and press the button to pour. Jennifer Ely, in charge of Private Cellar Selections at La Paulée, told us, “I used the Coravin Pivot for our sommelier Zoom call. I really like how easy it is to use – it’s sleek and not cumbersome. I’m looking forward to when we are tasting clients in person and putting this one to task.”

If you work in the restaurant or wine bar space, Pivot is great for those popular wines you’re pouring each week. "We love the Pivot, whether using it for our most popular wines because of its quick pour abilities, or wines with extra long corks or vinolok closure – it’s an integral part of our program,” says George Miliotes, Master Sommelier and Proprietor of Wine Bar George, Disney Springs.

Our winery partners are loving Pivot, too. “We’ve incorporated Pivot into several aspects of our business and we’re loving it. In fact, it’s my favorite Coravin as it’s fast, durable, and there was no learning curve for our staff,” explains Lloyd Vance, DTC Manager at Copper Cane. “Previously in the Tasting Room we were pulling corks and it’s made quite a difference in terms of service and reducing our waste to zero. The stoppers are fantastic – of course, we love them for screw cap wines but they also fit magnums.” Vance shares other benefits as well included:

  • During COVID-19 times it is also easier to pour table side and not touch the guest’s glass.

  • It inspired their restaurant manager at Avow Napa to create a Coravin wine by the glass menu. The Avow Napa team is already singing its praises in terms of ease of use, durability in a high-use area, zero waste and increased revenue.

  • It makes a great addition to a wine bundle. Copper Cane purchased Pivot systems to bundle with wine for a National Drink Wine Day virtual tasting.

Vance added, “And, while it’s my job to sell more wine, we love to help our customers reduce wine waste and enjoy a bottle over time with Coravin.”

Favorite wines to swap between

Coravin Pivot comes packaged with two stoppers, meaning you can rotate between two wines at a time. Of course, more stoppers are available to purchase in case you’re using Pivot to taste through your extensive cellar, to pour customer-favorites at your restaurant, or to pour wines in a tasting room setting.

For those rotating between two wines over the course of a week or month, we asked some of our friends to share their go to bottles. Nicole of @grapechic shared, “I love sipping Cru Beaujolais like Lapierre Morgon 2019 with dinner because the structure and freshness lends itself to so many different dishes. For whites, I like Isabelle et Denis Pommier Chablis 2018 if I just want a glass for an aperitif.

We sent the same question to food blogger Isabel of @tastyaz. Isabel told us, “My husband’s favorite is the Caymus Cabernet Sauvignon 2012 – he loves meat so it’s a wonderful pairing. She added, “I, on the other hand, fell in love with Vernaccia di San Giminiano during our trip to Italy. It’s a young and fruity wine, I’m particularly fond of the Palagetto 2018.”

Finally, we checked in with Kayla from @kayla.shea.uncorked (check out her TikTok). “When it comes to lighter wines, I am a bubbles girl through and through! I love Faire La Fete Cremant de Limoux NV for casual weeknight drinking. It’s a blend of 70% Chardonnay, 20% Chenin Blanc, 10% Pinot Noir for casual weeknight drinking.” Another favorite of Kayla is An Approach to Relaxation Sucette Grenache 2016 from Southern Australia. “This wine is absolutely delicious, and the cheeky name Sucette is right on par! This Grenache has a strong foundation of darker red fruits such as cranberry, pomegranate, cherry, and even dark chocolate.”

Is your mouth watering yet? Add a Pivot to your shopping bag and check your local wine shop for some of the wines mentioned above. You’ll love rotating between different wines all month long. Share your favorites with us on social @coravin.
